Crust Preparation

Prepare the Crust
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

Form the Crust
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch springform pan to form an even layer. Set aside.
Filling Preparation

Mix the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Add Whipping Cream
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Incorporate Berries
Fold in the fresh berries gently, making sure not to crush them.

Fill the Crust
Pour the filling into the prepared crust, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
Topping Preparation

Garnish the Charlotte
Once the filling has set, remove the sides of the springform pan. Top the charlotte with fresh mint leaves and additional berries for garnish.
