Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any damaged outer leaves. Cut them in half.

Prepare the Kale
Remove the tough stems from the kale leaves. Tear the leaves into bite-sized pieces.

Prepare the Fruits
Slice the organic apple and pink grapefruit into small wedges. Halve the red grapes.

Prepare the Cheese and Nuts
Shred or cube the white cheddar cheese. Coarsely chop the smoked almonds.
Cooking

Cook the Brussels Sprouts
In a large pot of boiling salted water, blanch the Brussels sprouts for 3-4 minutes until bright green. Drain and immediately transfer to an ice bath to stop cooking. Drain again and set aside.

Combine Ingredients
In a large bowl, combine the blanched Brussels sprouts, organic kale, sliced apple, pink grapefruit, red grapes, white cheddar cheese, and smoked almonds.

Drizzle the apple cider vinaigrette over the salad mixture. Toss gently to combine, ensuring everything is evenly coated.
