Falafel Mixture

Method

Falafel Preparation

  1. 1

    Prepare the Falafel Mixture

In a food processor, combine the canned black beans, minced garlic, parsley, cilantro, cumin, coriander, salt, and black pepper. Process until blended but still slightly chunky.

  2. 2

    Form the Falafel Balls

Transfer the mixture to a bowl and stir in the flour until well combined. Form small balls or patties with your hands, about 1-2 inches in diameter.

  3. 3

    Fry the Falafel

Heat olive oil in a frying pan over medium heat. Once hot, carefully add the falafel balls and fry until golden brown, about 3-4 minutes on each side. Drain on paper towels.

Tzatziki Sauce Preparation

  1. 4

    Mix the Tzatziki Ingredients

In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and chopped dill. Mix well and set aside in the refrigerator to chill.

Assembly

  1. 5

    Prepare the Serving

On a serving plate, spread a layer of hummus. Top with fried falafel balls, sliced tomatoes, pickled red onions, arugula, and chopped romaine lettuce.

  2. 6

    Add Tzatziki

Drizzle the tzatziki sauce over the assembled falafel and veggies. Sprinkle with Mediterranean herbs for added flavor.
