Prepare the Vegetables
Wash and chop all the vegetables into bite-sized pieces. Slice the bell peppers, carrots, and mushrooms. Cut the broccoli into florets and trim the ends of the snap peas. Slice the green onions, keeping the white and green parts separate.

Make the Sauce
In a small bowl, mix the soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water until well combined. Set aside.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until hot but not smoking.

Stir-Fry the Vegetables
Add the white parts of the green onions and stir-fry for about 30 seconds until fragrant. Then, add the bell peppers, carrots, broccoli, snap peas, and mushrooms. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.

Add the Sauce
Pour in the prepared sauce and toss the vegetables to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly and the vegetables are well glazed.

Season and Serve
Season with black pepper to taste. Serve the vegetable stir-fry over cooked rice, garnished with the green parts of the green onions.
