Preparation of Limoncello

Prepare the Lemons

Wash the lemons thoroughly under cold water to remove any wax or pesticide residues. Pat them dry with a clean towel.

Zest the Lemons

Using a vegetable peeler or a zester, remove the zest from the lemons, being careful to avoid the bitter white pith underneath. Aim for about 1 cup of lemon zest.

Infuse the Vodka

In a large glass jar, combine the lemon zest with the vodka. Seal the jar tightly and shake gently. Let it sit in a cool, dark place for at least 7 days, shaking the jar gently every couple of days to help release the flavors.

Prepare the Sugar Syrup

In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Allow the syrup to cool to room temperature.

Combine and Strain

After 7 days, strain the lemon-infused vodka through a fine mesh strainer or cheesecloth into a clean bottle to remove the zest. Discard the zest. Then, mix the cooled sugar syrup into the lemon-infused vodka, adjusting the sweetness to taste.

Bottle the Limoncello

Pour the finished limoncello into clean, sterilized bottles. Seal and store in the freezer for a refreshing chilled drink.
