Steak Tartare

Method

Preparation of Steak Tartare

  1. 1

    Prepare the Tenderloin

Start by finely dicing the tenderloin steak into small cubes. Place the diced steak in a mixing bowl.

  2. 2

    Season the Steak

Add salt, black pepper, and smoked paprika to the diced steak. Mix thoroughly to ensure the seasoning is evenly distributed.

  3. 3

    Incorporate Condiments

Stir in the garlic aioli, horseradish mustard, and Spanish capers into the seasoned steak mixture until well combined.

Cooking the Egg

  1. 4

    Fry the Egg

In a small skillet, melt 1 tablespoon of truffle butter over medium heat. Crack the egg into the skillet and cook until the white is set, but the yolk remains runny. This should take about 2-3 minutes.

Assembly

  1. 5

    Plate the Tartare

Spoon the steak tartare mixture onto a serving plate, forming a small mound.

  2. 6

    Add the Egg

Gently place the fried egg on top of the steak tartare.

  3. 7

    Finish with Truffle Butter

Drizzle the remaining truffle butter over the dish for added richness.
