For the Portobellos

For the Horseradish Cream Sauce

Method

Preparing the Portobellos

  1. 1

    Clean the Mushrooms

Gently wipe the portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and scrape out the gills with a spoon.

  2. 2

    Set Up Breading Station

In three separate shallow bowls, place the flour in the first bowl, whisk the eggs and milk together in the second bowl, and mix the grated Parmesan cheese, breadcrumbs, salt, and black pepper in the third bowl.

  3. 3

    Bread the Mushrooms

Dip each mushroom cap first into the flour, then into the egg mixture, and finally coat it thoroughly with the Parmesan breadcrumb mixture. Press the breadcrumbs onto the mushrooms to ensure they adhere well.

  4. 4

    Heat the Oil

In a large skillet, heat the olive oil over medium heat until shimmering.

  5. 5

    Fry the Mushrooms

Carefully place the breaded portobellos in the hot oil, frying them for about 4-5 minutes on each side or until golden brown and crispy. Transfer them to a paper towel-lined plate to drain excess oil.

Making the Horseradish Cream Sauce

  1. 6

    Mix the Sauce Ingredients

In a medium bowl, combine the sour cream, prepared horseradish, lemon juice, salt, and black pepper. Stir until well mixed.

  2. 7

    Adjust Seasoning

Taste the sauce and adjust the seasoning with more salt or horseradish if desired.
