Method

For the Smoked Fries

    Prep the Potatoes

    Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Season the Fries

    In a large bowl, toss the fries with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.

    Smoke the Fries

    Preheat your smoker to 225°F (107°C). Spread the fries on a smoking rack and smoke for about 45 minutes, or until they are tender and infused with smoky flavor.

    Crisp the Fries

    After smoking, heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the smoked fries in batches for about 3-4 minutes until golden and crispy. Drain on paper towels.

For the Moody Blue Fondue

    Prepare the Cheese Mixture

    In a medium saucepan, combine the blue cheese, cream cheese, heavy cream, minced garlic, and lemon juice.

    Heat the Fondue

    Heat over medium-low heat, stirring frequently until the cheeses melt and the mixture is smooth and creamy. Season with salt to taste.

    Finish the Fondue

    Once the fondue is melted and well combined, remove from heat and stir in chopped chives.

For the Applewood Smoked Bacon

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 5-7 minutes. Drain on paper towels and chop into small pieces.
