Calamari Preparation

Frying

Method

Calamari Preparation

  1. 1

    Soak the Calamari

In a medium bowl, combine the calamari rings and buttermilk. Make sure all pieces are submerged. Cover and refrigerate for at least 30 minutes to tenderize the calamari.

  2. 2

    Prepare the Coating

In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

Frying

  1. 3

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 180°C (350°F). Use a thermometer to check the temperature.

  2. 4

    Coat the Calamari

Remove the calamari from the fridge. Take each ring out of the buttermilk and let the excess drip off. Dredge the calamari in the flour mixture, ensuring an even coating.

  3. 5

    Fry the Calamari

Carefully drop a few coated calamari rings into the hot oil. Fry for about 2-3 minutes or until they turn golden brown and crispy. Avoid overcrowding the pot.

  4. 6

    Drain and Serve

Use a slotted spoon to remove the fried calamari and place them on a plate lined with paper towels to drain excess oil. Repeat with the remaining calamari. Serve hot, garnished with chopped parsley and lemon wedges.
