Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water to remove any grit. Remove the head and tentacles, and pull out the innards. Cut the body into rings about 1/2 inch wide.
- 2
Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to ensure the spices are evenly distributed.

Heat the Oil
In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 5
Coat the Calamari
Dip each calamari ring into the egg mixture and then dredge it in the flour mixture, ensuring an even coating.
- 6
Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.
- 7
Drain and Serve
Using a slotted spoon, remove the fried calamari from the oil and drain on paper towels. Serve immediately with lemon wedges and a sprinkle of fresh parsley on top.
