Prepare Ahi Tuna

Season the Tuna
Pat the fresh Ahi tuna steaks dry with paper towels. Season both sides generously with kosher salt and black pepper.

Sear the Tuna
In a large skillet, heat olive oil over medium-high heat. Once hot, add the tuna steaks to the skillet. Sear for 1-2 minutes on each side for medium-rare, depending on thickness. Remove the steaks from the skillet and let them rest for a few minutes before slicing.
Prepare Wasabi Slaw

Combine Slaw Ingredients
In a large bowl, combine shredded cabbage, shredded carrots, and sliced green onions.

Make Dressing
In a separate small bowl, whisk together rice vinegar, mayonnaise, wasabi paste, sesame oil, and sugar until smooth. Season with salt and pepper to taste.

Toss Slaw
Pour the dressing over the cabbage mixture and toss well to combine. Allow the slaw to sit for at least 10 minutes to let the flavors meld.

Slice the rested Ahi tuna into thin strips. Serve the tuna on a plate alongside a generous portion of wasabi slaw.
