    Prepare the Candied Bacon

    Preheat your oven to 350°F (175°C). Place the bacon slices on a baking sheet lined with parchment paper. Sprinkle brown sugar over the bacon and bake for 15-20 minutes until crispy and caramelized. Let it cool and chop into small pieces.

    Season the Filet Medallions

    Pat the filet medallions dry with paper towels. In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and rosemary. Rub this mixture evenly over both sides of each filet medallion.

Cooking

    Sear the Filets

    Heat a cast-iron skillet over medium-high heat. Once hot, add the filet medallions to the skillet. Sear for about 3-4 minutes on each side for medium-rare, or adjust the time according to your preferred doneness.

    Combine with Candied Bacon

    Once the filet medallions are cooked to your liking, remove them from the skillet and let them rest for 5 minutes. Top each filet with the chopped candied bacon before serving.
