Method

Mashing

    In a large mash tun, combine the corn, rye, and malted barley with water. Heat the mixture to about 165°F (74°C) and maintain this temperature for about 60 minutes.

    After the mashing process is complete, cool the mash to approximately 70°F (21°C) to prepare for fermentation.

Fermentation

    Once the mash has cooled, add the yeast to the mash and stir thoroughly to incorporate.

    Transfer the mash to a fermentation vessel and allow it to ferment for about 3 to 5 days, monitoring the temperature to ensure it stays around 70°F (21°C).

Distillation

    Distill the Wash

    Once fermentation is complete, transfer the wash to a still and distill the liquid. Collect the distillate, ensuring to separate the heads, hearts, and tails.

Aging

    Age the Whiskey

    Transfer the collected hearts into new charred oak barrels for aging. Allow the whiskey to age for a minimum of 4 to 6 years, monitoring the flavor development over time.
