Steak Preparation

    Prepare the Steak

    Remove the Kansas City strip steak from the refrigerator and let it come to room temperature for about 30 minutes before cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and black pepper. Use your hands to gently press the seasoning into the meat.

    Optional Marinade (if using)

    If you choose to marinate the steak, blend garlic cloves, fresh rosemary, and balsamic vinegar in a food processor. Coat the steak in the marinade and let it rest in the refrigerator for 1-2 hours.

    Preheat the Grill

    Preheat your grill or cast iron skillet over high heat for at least 10 minutes until it is very hot.

    Brush the grill or skillet with olive oil to prevent sticking.
