Truffle Mayonnaise

Caramelized Onions

Smoked Fries

Method

Burgers

  1. 1

    Prepare the Patties

In a mixing bowl, combine the dry-aged ground beef with kosher salt and black pepper. Mix gently until just combined. Divide the mixture into two equal portions and shape them into patties about ¾ inch thick.

  2. 2

    Cook the Burgers

Preheat a grill or a skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let them rest for a few minutes.

Truffle Mayonnaise

  1. 3

    Make the Truffle Mayonnaise

In a small bowl, combine the mayonnaise and truffle oil. Mix well until fully incorporated and set aside.

Caramelized Onions

  1. 4

    Caramelize the Onions

Slice the yellow onions thinly. In a skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes until they are soft and golden brown. Remove from heat.

Herb Garlic Cream

  1. 5

    Prepare the Herb Garlic Cream

In a small bowl, mix the cream cheese, minced garlic, and chopped fresh herbs until well combined. Set aside.

Smoked Fries

  1. 6

    Prepare the Fries

Wash and cut the russet potatoes into thin strips. In a bowl, toss the fries with olive oil and smoked paprika until evenly coated.

  2. 7

    Cook the Fries

Preheat the oven to 425°F (220°C). Spread the fries on a baking sheet in a single layer and bake for about 25-30 minutes until golden and crispy, flipping halfway through.

Assembly

  1. 8

    Assemble the Burgers

On the bottom half of each burger bun, spread a generous amount of truffle mayonnaise, followed by the burger patties, caramelized onions, and a dollop of herb garlic cream. Top with the other half of the bun.

  2. 9

    Serve with Fries

Serve the assembled baby burgers alongside the smoked fries for a delicious meal.
