Prepare the Patties
In a mixing bowl, combine the dry-aged ground beef with kosher salt and black pepper. Mix gently until just combined. Divide the mixture into two equal portions and shape them into patties about ¾ inch thick.

Make the Truffle Mayonnaise
In a small bowl, combine the mayonnaise and truffle oil. Mix well until fully incorporated and set aside.

Prepare the Herb Garlic Cream
In a small bowl, mix the cream cheese, minced garlic, and chopped fresh herbs until well combined. Set aside.
Smoked Fries

Prepare the Fries
Wash and cut the russet potatoes into thin strips. In a bowl, toss the fries with olive oil and smoked paprika until evenly coated.

Cook the Fries
Preheat the oven to 425°F (220°C). Spread the fries on a baking sheet in a single layer and bake for about 25-30 minutes until golden and crispy, flipping halfway through.
Assembly

Assemble the Burgers
On the bottom half of each burger bun, spread a generous amount of truffle mayonnaise, followed by the burger patties, caramelized onions, and a dollop of herb garlic cream. Top with the other half of the bun.
