Salad Preparation

Prepare the Romaine
Rinse the romaine lettuce heads under cold water. Shake off excess water and dry them thoroughly. Cut the romaine into bite-sized pieces and place them in a large salad bowl.

Make the Dressing
In a medium mixing bowl, mash the anchovy fillets and garlic cloves together with a fork until they form a paste. Add the Dijon mustard, Worcestershire sauce, and lemon juice to the bowl, whisking to combine.

Emulsify the Dressing
Slowly drizzle in the olive oil while whisking continuously until the dressing is well emulsified and smooth. Season with salt and black pepper to taste.

Combine Ingredients
Pour the dressing over the prepared romaine lettuce in the salad bowl. Toss well to ensure all the lettuce is evenly coated with the dressing.

Sprinkle the grated Parmesan cheese and croutons over the top of the salad. Toss lightly to combine.
