Method
Pasta Preparation
- 1
Cook the Pasta
In a large pot of salted boiling water, add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Cheese Sauce Preparation
- 2
Make the Roux
In a large saucepan over medium heat, melt the unsalted butter. Once melted, sprinkle in the all-purpose flour and whisk continuously for about 2 minutes until it forms a paste and turns slightly golden.
- 3
Add Milk and Cream
Gradually whisk in the whole milk and heavy cream, continuing to whisk until the mixture is smooth and begins to thicken, about 5-7 minutes.
- 4
Add Cheeses
Remove the saucepan from heat and stir in the sharp cheddar, Gruyère, and Parmesan cheeses until fully melted and incorporated.
- 5
Flavor the Sauce
Stir in the black truffle oil, salt, black pepper, and white truffle salt. Mix well to combine.
Combine and Bake
- 6
Combine Pasta and Sauce
In a large mixing bowl, combine the cooked macaroni with the cheese sauce, mixing until the pasta is fully coated.
- 7
Prepare the Topping
In a small bowl, mix the panko breadcrumbs with melted butter and chopped parsley until well combined.
- 8
Assemble the Dish
Transfer the macaroni and cheese mixture into a greased baking dish. Evenly sprinkle the panko mixture over the top.
- 9
Bake
Preheat the oven to 350°F (175°C) and bake the macaroni and cheese for about 25-30 minutes or until the top is golden brown and bubbly.
- 10
Serve
Remove from the oven and let cool for a few minutes. If desired, garnish with shaved black truffles before serving.
