Pork Tenderloin Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Pork

    In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Rub this mixture all over the pork tenderloin.

    Sear the Pork

    In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the pork tenderloin and sear all sides until browned (about 3-4 minutes per side).

    Roast the Pork

    Transfer the skillet to the preheated oven and roast the pork for about 20-25 minutes or until it reaches an internal temperature of 145°F (63°C). Remove from the oven and let it rest for 5-10 minutes before slicing.

    Prepare the Asparagus

    While the pork is roasting, trim the ends of the asparagus and place them on a baking sheet.

    Season the Vegetables

    Add cherry tomatoes to the baking sheet with asparagus. Drizzle balsamic vinegar and honey over the vegetables, and sprinkle with salt and pepper. Toss gently to combine.

    Place the baking sheet in the oven during the last 10 minutes of the pork's roasting time. Roast until the asparagus is tender and the tomatoes are blistered.
