Preparation
- 1
Season the Filet Mignon
Pat the filet mignon dry with paper towels. Season both sides generously with kosher salt, ground black pepper, and garlic powder. Let it sit at room temperature for about 30 minutes to allow the seasoning to penetrate.
- 2
Prepare the Herbs
Chop the fresh rosemary finely and set it aside. This will be used to add flavor during the cooking process.

Optional Sauce Preparation
If preparing the optional sauce, remove the steak from the skillet and let it rest. In the same skillet, add chopped shallots and sauté until translucent. Pour in red wine, scraping up any brown bits from the bottom. Simmer until reduced by half, then whisk in butter until melted and combined.

Rest and Serve
Let the filet mignon rest for about 5-10 minutes before slicing. Serve with the optional red wine sauce drizzled over the top if desired.
