    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible. This helps achieve a crispy fry.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the correct temperature.

    Carefully add a batch of the dried potato strips to the hot oil. Fry in batches to avoid overcrowding. Fry for about 4-5 minutes or until they are golden brown and crispy.
