1. Separate the Egg Whites

Carefully crack the eggs and separate the egg whites from the yolks, placing the whites in a clean mixing bowl. You can reserve the yolks for another recipe.

2. Whisk the Egg Whites

Using a hand whisk or an electric mixer, beat the egg whites until they become frothy. Add salt and pepper, and continue to whisk until soft peaks form.

In a non-stick skillet, heat the olive oil over medium heat until it shimmers.
