Sandwich Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the thick-cut bacon until crispy, about 5-7 minutes. Remove and drain on paper towels.

    Scramble the Eggs

    In a bowl, beat the eggs with salt and black pepper. In the same skillet, add butter over medium-low heat. Once melted, pour in the eggs and gently stir with a spatula until scrambled and just set, about 3-4 minutes.

    Assemble the Sandwich

    On one slice of sourdough bread, layer the scrambled eggs, two slices of provolone cheese, and crispy bacon. Top with the other slice of sourdough.

    In the same skillet, melt a little butter over medium heat. Place the sandwich in the skillet, cooking for about 3-4 minutes on each side, until golden brown and the cheese is melted.

    Preheat oven according to package instructions for tater tots. Spread the frozen tater tots on a baking sheet and drizzle with vegetable oil. Sprinkle with salt and toss to coat. Bake according to package directions until golden and crispy, typically about 20-25 minutes.
