For the Steak

    Season the Steak

    Rub the flank steak with olive oil, salt, and black pepper on both sides.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Cook the steak for 5-7 minutes on each side or until it reaches desired doneness. Remove from heat and let it rest for 5 minutes.

    Slice the Steak

    After resting, slice the steak thinly against the grain.

For the Quesadilla Assembly

    Prepare the Quesadilla

    On one half of each tortilla, layer sliced steak, corn, diced tomatoes, white cheddar cheese, chopped cilantro, and black beans.

    Fold and Cook

    Fold the tortillas in half over the filling. Heat a non-stick skillet over medium heat and place the quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and the cheese has melted.

    Slice and Serve

    Remove from skillet, slice into wedges, and serve with chipotle crème and avocado mango salsa.

For the Chipotle Crème

    Mix the Crème

    In a bowl, combine sour cream, minced chipotle peppers, and lime juice. Mix well and set aside.

For the Avocado Mango Salsa

    Prepare the Salsa

    In a bowl, mix together the diced avocado, diced mango, red onion, lime juice, and salt to taste. Gently combine and set aside.
