Chocolate Mousse

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Add the unsalted butter to the bowl. Set it over a pot of simmering water (double boiler method) and melt gently, stirring occasionally until smooth. Remove from heat and let it cool slightly.

    Prepare the Egg Mixture

    In a separate bowl, whisk the large eggs and granulated sugar together until the mixture is pale and fluffy. This should take about 5-7 minutes.

    Combine Chocolate and Eggs

    Gradually add the melted chocolate mixture to the egg mixture, stirring continuously to incorporate. Add the vanilla extract and mix until fully combined.

    Whip the Cream

    In another bowl, whip the heavy cream until stiff peaks form. Be careful not to over-whip. You want it to be light and fluffy.

    Fold in Whipped Cream

    Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the whipped cream. Mix until just combined.

    Chill the Mousse

    Divide the mousse mixture into serving cups or bowls. Cover and refrigerate for at least 2 hours or until set.

    Prepare the Whipped Cream

    In a clean bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

    Serve

    Once the mousse is set, top each serving with a dollop of whipped cream before serving. Optionally, garnish with chocolate shavings or fresh berries.
