    Cook the Brown Rice

    In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Prepare the Mango Avocado Salsa

    While the rice is cooking, dice the mango, avocado, and red onion. In a bowl, combine diced mango, avocado, red onion, chopped cilantro, lime juice, salt, and pepper. Mix well and set aside.

    Grill the Chicken

    Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, then grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

    In a large bowl, layer the cooked brown rice, romaine lettuce (chopped), grilled chicken slices, corn, black beans, and top with mango avocado salsa. Serve immediately.
