Prepare the seafood
Rinse the clams and mussels under cold water, scrubbing the shells to remove any grit. Devein and peel the shrimp. Set all seafood aside.

Chop the vegetables
Dice the tomatoes and set them aside with the green peas.

Slice the chorizo
Cut the chorizo sausage into thin slices.
Cooking

Heat the oil
In a large paella pan or skillet, heat the olive oil over medium heat.

Cook the chorizo
Add the sliced chorizo to the pan and cook for about 5 minutes until browned and slightly crispy.

Add vegetables
Stir in the diced tomatoes and cook for an additional 2-3 minutes until softened.

Add rice and spices
Add the yellow rice, saffron, paprika, salt, and black pepper. Stir to combine.

Pour in the stock
Pour the fish stock into the pan and bring to a boil. Reduce heat to low and simmer for about 15 minutes without stirring.

Cover and cook
Cover the pan with a lid or aluminum foil, and cook for another 10-15 minutes until the seafood is cooked through and the rice has absorbed the liquid.

Rest and serve
Remove the pan from heat and let it rest for 5 minutes before serving. Enjoy your Seafood Paella!
