Method

Preparation

  1. 1

    Prepare the Pasta

In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

  2. 2

    Prepare the Asparagus

In the same pot, blanch the asparagus for 2-3 minutes until bright green and tender-crisp. Remove and set aside in ice water to stop cooking.

Cooking the Seafood

  1. 3

    Sauté the Seafood

In a large skillet over medium heat, add a drizzle of olive oil. Add the bay scallops and shrimp, season with salt and black pepper, and cook for 3-4 minutes until the shrimp is pink and the scallops are opaque. Remove the seafood from the skillet and set aside.

Combining Ingredients

  1. 4

    Combine Everything

In the same skillet, add the chopped sun dried tomatoes and cooked asparagus. Sauté for 2 minutes. Return the cooked seafood to the skillet, add the basil pesto, and toss to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.

  2. 5

    Mix with Pasta

Add the cooked linguine to the skillet and toss gently to combine all ingredients well. Adjust seasoning with additional salt and pepper if needed.

Preparing Toppings

  1. 6

    Toast the Breadcrumbs

In a small skillet, heat olive oil over medium heat. Add the breadcrumbs and dried herbs, stirring frequently until golden brown and crispy, about 3-4 minutes.

Serving

  1. 7

    Serve the Dish

Plate the seafood linguine and top with toasted herb breadcrumbs. Serve immediately and enjoy!
