    Wash the Spinach

    Thoroughly rinse the fresh spinach under cold water to remove any dirt or grit. Shake off excess water or spin in a salad spinner to dry.

    Prepare the Garlic

    Peel the garlic cloves and mince them finely using a knife or a garlic press.

    Heat the Olive Oil

    In a large skillet, add 2 tablespoons of olive oil over medium heat. Allow the oil to heat for about 1-2 minutes until it shimmers.

    Sauté the Garlic

    Add the minced garlic to the skillet and sauté for 30 seconds until aromatic but not browned.

    Add the Spinach

    Gradually add the 10 cups of fresh spinach to the skillet. It may seem like a lot, but spinach wilts down significantly.

    Cook the Spinach

    Toss the spinach in the skillet with the garlic and olive oil. Cook for 2-4 minutes, stirring occasionally, until the spinach is wilted and bright green.

    Season the Spinach

    Sprinkle the sautéed spinach with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper. Stir to combine.

    Finish with Lemon Juice

    Remove the skillet from heat and add 1 tablespoon of lemon juice. Toss gently to incorporate the juice.
