Preparation

    Prepare the Fish

    Rinse the fish fillets under cold water and pat them dry with paper towels. Place them on a clean cutting board.

    Season the Fish

    Drizzle the olive oil over the fish fillets and rub it in to ensure they are well coated. Sprinkle salt and black pepper evenly over both sides of the fillets.

Cooking

    Cook the Fish

    In a large skillet over medium heat, add the seasoned fish fillets. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and is cooked through.

    Optional Crust Preparation

    If you opted for a crust, preheat your oven to 400°F (200°C). In a bowl, mix panko bread crumbs, grated Parmesan cheese, and chopped herbs. Press this mixture onto the top of each fish fillet before placing it in the oven.

    Finish Cooking with Crust

    Bake the crusted fish in the preheated oven for 10-12 minutes, or until the crust is golden brown and the fish is cooked thoroughly.

Sauce Preparation

    Prepare the Sauces

    While the fish is cooking, prepare your sauces. For the lemon butter sauce, melt butter in a small saucepan, then stir in lemon juice and zest. For the garlic herb sauce, combine minced garlic with olive oil, herbs, and a pinch of salt in a small bowl.

Serving

    Plate the Fish

    Once the fish is cooked, remove it from the skillet or oven and place it on a serving plate. Drizzle with your choice of sauce (lemon butter or garlic herb) before serving.

    Garnish and Serve

    Garnish with additional fresh herbs if desired and serve with your choice of sides.
