Preparation of Quinoa

    Cook the Quinoa

    Rinse the quinoa under cold water. In a medium pot, combine 1/2 cup of quinoa with 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy. Remove from heat and let it cool.

    Dice the Campari tomatoes and cucumbers into bite-sized pieces. Thinly slice the red onion. Pit and slice the Kalamata olives if they are whole.

Falafel Preparation

    If using pre-made falafel, heat them according to package instructions. If making fresh, prepare the falafel mixture and shape into small balls, then fry or bake until golden brown.

Assembling the Salad

    Combine Ingredients

    In a large mixing bowl, combine the cooked quinoa, diced tomatoes, cucumbers, sliced red onion, Kalamata olives, and crumbled feta cheese. Toss gently to mix.

    Add the prepared falafel pieces to the salad and mix gently to avoid breaking the falafel.

Dressing the Salad
