    Prepare the Ingredients

    Dice the onion, celery, and potatoes. Mince the garlic. If using fresh corn, cut the kernels off the cob.

    Cook the Seafood

    In a large pot over medium heat, add the lobster meat and shrimp. Cook for about 3-4 minutes until they turn opaque. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add a bit of oil if needed and sauté the onion, celery, and garlic until they are translucent, about 5 minutes.

    Add Potatoes and Liquids

    Add the diced potatoes, corn, white wine, sherry, and chicken broth. Stir to combine and bring to a boil.

    Simmer the Chowder

    Reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender.

    Finish the Chowder

    Stir in the heavy cream, thyme, bay leaf, salt, and black pepper. Return the cooked lobster and shrimp to the pot. Simmer for another 5 minutes.

    Remove the bay leaf and serve the chowder hot, garnished with fresh herbs if desired.
