    Cook the Linguini

    In a large pot, bring salted water to a boil. Add the linguini and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken

    While the pasta is cooking, season the chicken breast with salt and black pepper. Heat a skillet over medium heat and add a drizzle of olive oil. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat, let it rest for a few minutes, then slice into strips.

    Chop the Vegetables

    Dice the shallots and mince the garlic cloves.

    Cook the Pancetta

    In the same skillet used for the chicken, add the pancetta and cook over medium heat until crispy, about 4-5 minutes. Remove excess fat if necessary.

    Sauté Shallots and Garlic

    Add the diced shallots to the skillet with the pancetta and sauté for 2-3 minutes until they become translucent. Add the minced garlic and cook for an additional minute.

    Prepare the Sauce

    Pour in the heavy cream, stirring to combine, and let it simmer for 2-3 minutes. Add the grated Parmesan cheese, stirring until melted and creamy.

    Combine Ingredients

    Add the cooked linguini, sliced chicken, and frozen peas to the skillet. Toss everything together until the pasta is well coated with the sauce. Cook for another 2-3 minutes until heated through.

    Season to Taste

    Taste the carbonara and adjust seasoning with additional salt and black pepper if needed.
