    Wash and Prepare Vegetables

    Thoroughly wash all vegetables under running water. Peel the carrots and cut them into thin matchstick-sized pieces. Cut the zucchini, bell peppers, and red cabbage into similar thin julienne strips. Trim the ends of the green beans and cut them into 1-inch segments.

    Sauté Vegetables

    In a large skillet or wok, heat the olive oil over medium-high heat. Once the oil is hot, add the minced garlic and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add the julienned carrots, zucchini, bell peppers, red cabbage, and green beans to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
