Method

Marinate the Skirt Steak

    Prepare Marinade

    In a bowl, whisk together the olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper until well combined.

    Marinate Steak

    Place the skirt steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Prepare Miso Compound Butter

    Mix Ingredients

    In a bowl, combine the softened unsalted butter, white miso paste, chopped chives, and lemon zest. Mix until smooth and fully incorporated.

    Shape Butter

    Transfer the mixture onto a piece of parchment paper, shape it into a log, and roll it tightly. Chill in the refrigerator until firm, about 30 minutes.

Make Parmesan Truffle Fries

    Prepare Potatoes

    Preheat the oven to 425°F (220°C). Toss the cut fries in a large bowl with truffle oil, salt, and black pepper until well coated.

    Bake Fries

    Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Add Parmesan and Parsley

    Remove fries from the oven and immediately sprinkle with grated Parmesan cheese and chopped parsley. Toss lightly to combine.

Cook Skirt Steak

    Preheat a grill or grill pan over medium-high heat. Remove the skirt steak from the marinade, allowing excess to drip off. Grill for 4-5 minutes per side for medium-rare, or until your preferred doneness is reached.
