Salad Preparation

Prepare the Salad Base
Wash and dry the bib lettuce, arugula, and radicchio. Tear the bib lettuce into bite-sized pieces and combine with arugula and radicchio in a large salad bowl.

Prepare the Mango
Peel the mango, slice it in half, and remove the pit. Cut the mango into thin strips and set aside.
Fried Calamari

Prepare the Calamari
In a bowl, mix the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, whisk the egg and buttermilk together.

Coat the Calamari
Dip the calamari rings into the buttermilk mixture, then coat them in the flour mixture. Ensure they are well-coated.

Fry the Calamari
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Miso Ginger Dressing

Mix the Dressing
In a small bowl, whisk together the white miso paste, fresh ginger, rice vinegar, sesame oil, honey, soy sauce, and water until smooth.
Assembly

Assemble the Salad
Add the cooked calamari and mango slices to the salad bowl. Drizzle the miso ginger dressing over the top and toss gently to combine. Serve immediately.
