Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Rinse the cauliflower and cut it into bite-sized florets.

Make the Batter
In a large bowl, mix together the cornstarch, salt, and black pepper. Gradually whisk in the water until smooth.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring they are well-coated. Shake off any excess batter.

Bake the Cauliflower
Place the coated florets on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden and crispy.

Prepare the Sweet Chili Glaze
While the cauliflower is baking, combine sweet chili sauce, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger in a saucepan over medium heat. Stir until heated through and combined.

Glaze the Cauliflower
Once the cauliflower is done baking, remove it from the oven and toss it in the warm sweet chili glaze until evenly coated.

Transfer the glazed cauliflower to a serving platter. Top with sliced scallions and sprinkle with sesame seeds for garnish.
