Crab Cake Preparation

Prepare the Crab Cake Mixture
In a large bowl, combine the fresh crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, Worcestershire sauce, and chopped green onions. Mix until well combined.

Add the beaten egg and bread crumbs to the mixture. Stir until the mixture holds together. Season with salt and black pepper to taste.

Using your hands, form the crab mixture into patties, about 3 inches in diameter. Set aside.

Cook Crab Cakes
In a skillet over medium heat, add a little oil and cook the crab cakes for about 4-5 minutes on each side or until golden brown. Remove from heat and set aside.

Cook the Bacon
In the same skillet used for the crab cakes, cook the bacon until crispy. Remove and drain on paper towels.

On the bottom half of each bun, layer a crab cake, followed by lettuce, tomato slices, and two slices of bacon. Top with the other half of the bun.

Preheat your oven to 425°F (220°C). In a large bowl, toss the potato wedges with olive oil, Old Bay seasoning, and salt until evenly coated.
