    Clean the Mussels

    Rinse the mussels under cold water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

    Chop Vegetables

    Dice the red and green bell peppers and finely chop the shallots and garlic. Grate the ginger.

Cooking

    Sauté Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the shallots, garlic, and ginger. Sauté until the shallots are translucent, about 3-4 minutes.

    Add Bell Peppers and Spices

    Add the diced red and green bell peppers to the pot along with the curry powder, salt, and black pepper. Stir for another 2-3 minutes until the peppers start to soften.

    Add Coconut Milk and Broth

    Pour in the coconut milk and vegetable broth. Stir well to combine all the ingredients. Bring to a gentle simmer.

    Cook Mussels

    Add the cleaned mussels to the pot, cover with a lid, and let them cook for about 5-7 minutes or until the mussels have opened up. Discard any mussels that remain closed.

    Finish with Lime Juice and Cilantro

    Once the mussels are cooked, remove the pot from heat and stir in the lime juice. Garnish with chopped cilantro before serving.
