Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Crust Ingredients

In a medium bowl, combine graham cracker crumbs, cocoa powder, granulated sugar, and salt. Mix well.

  3. 3

    Add Butter

Pour in the melted butter and stir until the mixture resembles wet sand.

  4. 4

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

  5. 5

    Bake the Crust

Bake in the preheated oven for 10 minutes. Remove and let cool while preparing the filling.

Filling Preparation

  1. 6

    Melt the Chocolate

In a heatproof bowl, combine the chopped dark chocolate and heavy cream. Place over a pot of simmering water and stir until melted and smooth.

  2. 7

    Beat Eggs and Sugar

In a separate bowl, whisk together the eggs and granulated sugar until frothy and pale.

  3. 8

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly to prevent curdling.

  4. 9

    Add Flavorings

Stir in the vanilla extract and bourbon until well combined.

  5. 10

    Add Pecans

Fold in the chopped pecans gently.

  6. 11

    Pour Filling into Crust

Pour the filling into the cooled crust, smoothing the top with a spatula.

  7. 12

    Bake the Torte

Bake in the oven for 30-35 minutes, or until the filling is set but still slightly jiggly in the center.

  8. 13

    Cool the Torte

Remove from the oven and let cool completely in the pan. Then refrigerate for at least 2 hours before serving.

Serving Preparation

  1. 14

    Prepare Topping

Just before serving, dust the top of the torte with powdered sugar and garnish with whole pecans.

  2. 15

    Slice and Serve

Slice into wedges and serve chilled or at room temperature.
