Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to combine.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are well-coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 180°C (350°F).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying them for about 2-3 minutes or until golden brown. Do not overcrowd the pan.

Drain and Serve
Remove the fried calamari with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve immediately.

Combine Ingredients
In a small bowl, mix together the mayonnaise, Sriracha sauce, lemon juice, garlic powder, and salt to taste.

Adjust Flavor
Taste the sauce and adjust the level of spiciness by adding more Sriracha if desired.

Transfer the spicy dipping sauce to a serving bowl and serve alongside the fried calamari.
