Method

Cajun Rubbed Shrimp

    Prepare the Shrimp

    In a large bowl, combine the shrimp and Cajun seasoning. Drizzle with olive oil and toss until evenly coated. Set aside to marinate for 15-20 minutes.

Paprika Spiced Broken Scallops

    Prepare the Scallops

    In a bowl, combine the broken scallops with smoked paprika. Melt butter in a skillet over medium heat and add the scallops, cooking for about 5-7 minutes until they are opaque and cooked through.

Jasmine Rice

    Cook the Jasmine Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and water. Bring to a boil, then reduce to simmer. Cover and cook for 15 minutes or until the water is absorbed. Fluff with a fork and keep warm.

Corn & Tomato Medley

    Prepare the Medley

    In a medium saucepan, combine the sweet corn, diced tomatoes, salt, and black pepper. Heat over medium heat for about 5-7 minutes until warmed through. Stir occasionally.

Louisiana Creole Sauce

    Make the Creole Sauce

    In a skillet, heat olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables soften. Add minced garlic and cook for another minute. Stir in the canned diced tomatoes, Worcestershire sauce, hot sauce, salt, and black pepper. Simmer for 10 minutes, allowing the flavors to meld.

Combine and Serve

    Finish the Dish

    In a large serving platter or individual bowls, layer the jasmine rice at the bottom. Top with the Cajun rubbed shrimp, paprika spiced broken scallops, corn and tomato medley, and a generous amount of Louisiana Creole sauce. Serve hot.
