Method

Preparation of Rice

  1. 1

    Cook Jasmine Rice

In a medium saucepan, combine 1 cup of jasmine rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Cooking Shrimp

  1. 2

    Prepare Shrimp

In a bowl, toss the shrimp with paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt to taste. Ensure that the shrimp are evenly coated with the spices.

  2. 3

    Cook Shrimp

In a large skillet over medium-high heat, cook the seasoned shrimp for 2-3 minutes on each side, or until they are pink and cooked through. Remove from skillet and set aside.

Cooking Bacon and Vegetables

  1. 4

    Cook Bacon

In the same skillet, add the bacon slices and cook over medium heat until crispy. Remove and place on a paper towel to drain excess fat.

  2. 5

    Sauté Zucchini

In the bacon drippings, add sliced zucchini and sauté for 3-4 minutes until tender. Remove from heat.

Assembling the Bowl

  1. 6

    Build the Bowl

In each serving bowl, layer the cooked jasmine rice, followed by the sautéed zucchini, shredded lettuce, cooked shrimp, and sliced avocado. Top with crispy bacon and drizzle with salsa verde.
