Dough Preparation

Mix the Dough Ingredients
In a large mixing bowl, combine the all-purpose flour, salt, and unsalted butter. Mix until the mixture resembles coarse crumbs.

Add Egg and Water
Make a well in the center of the flour mixture. Add the egg and cold water. Mix until the dough comes together.

Knead and Rest
Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest in the refrigerator for 30 minutes.
Filling Preparation

Cook the Filling
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.

Cool the Filling
Remove from heat and let the filling cool to room temperature.
Assembling and Baking

Roll Out the Dough
Preheat your oven to 400°F (200°C). On a floured surface, roll out the dough to about 1/8 inch thick.

Cut and Fill the Dough
Using a round cutter, cut out circles from the dough. Place about 2 tablespoons of the beef filling in the center of each circle.

Seal the Empanadas
Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, and crimp with a fork if desired.

Bake the Empanadas
Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
Aji Amarillo Sauce Preparation

Mix the Sauce
In a small bowl, combine the Aji Amarillo paste, mayonnaise, lime juice, and salt. Mix well until smooth.
