Fish Preparation

    Marinate the Fish

    In a bowl, combine olive oil, lime juice, cumin, paprika, salt, and black pepper. Add the Chatham cod pieces and coat them well. Let them marinate for at least 30 minutes.

    Cook the Fish

    Preheat a grill or skillet over medium-high heat. Cook the marinated cod for about 4-5 minutes on each side, or until cooked through and flaky.

Slaw Preparation

    Prepare the Slaw

    In a large bowl, shred the red cabbage and grate the carrot. Add chopped cilantro and lime juice. Season with salt to taste. Toss everything together and let it sit for at least 10 minutes to meld the flavors.

Aioli Preparation

    Make the Habanero Aioli

    In a small bowl, mix mayonnaise, finely chopped habanero pepper, lime juice, minced garlic, and salt to taste. Stir until well combined and set aside.

Taco Assembly

    Assemble the Tacos

    Warm the corn tortillas on a skillet for about 30 seconds on each side. Place a piece of grilled fish on each tortilla, top with a generous amount of red cabbage slaw, diced mango, and drizzle with habanero aioli. Serve immediately.
