Cook the Rice
In a saucepan, bring 2 cups of water to a boil. Add 1 cup of jasmine rice, reduce heat to low, cover, and simmer for 15 minutes until rice is tender and water is absorbed. Fluff with a fork and set aside.

Prepare the Filling
In a large bowl, combine cooked jasmine rice, shredded chicken, Monterey jack cheese, shredded cabbage, red onion, jalapeños, and white sauce. Mix well to combine.

Assemble the Burritos
Lay a flour tortilla flat on a clean surface. Spoon a generous portion of the filling mixture onto the center of the tortilla. Fold the sides over the filling and then roll the tortilla up tightly from the bottom to the top.

Cook the Burritos
In a skillet over medium heat, place the assembled burritos seam-side down. Cook for 3-4 minutes until golden brown, then flip and cook for an additional 3-4 minutes on the other side.

Serve
Cut the burritos in half and serve warm with additional white sauce, if desired.
