Meatball Mixture

Method

Meatball Mixture

  1. 1

    Prepare mixture

In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, eggs, milk, minced garlic, parsley, oregano, salt, and pepper. Mix gently with hands until just combined.

  2. 2

    Shape meatballs

Shape the mixture into 1.5-inch meatballs and place on a parchment-lined baking tray or plate.

Sear Meatballs and Make Sauce

  1. 3

    Brown meatballs

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add meatballs in batches and brown on all sides. Do not cook through; transfer to a plate.

  2. 4

    Sauté aromatics

In the same skillet, add chopped onion and minced garlic; sauté until translucent and fragrant, about 5 minutes.

  3. 5

    Combine sauce

Stir in crushed tomatoes, tomato sauce, sugar, and dried basil. Bring to a simmer and season with salt and pepper to taste.

  4. 6

    Simmer meatballs in sauce

Return the browned meatballs to the sauce. Reduce heat to low and simmer gently, uncovered, for 60–90 minutes, turning occasionally, until the meatballs are cooked through and the sauce thickens.

Finish and Serve

  1. 7

    Final seasoning

Taste sauce and adjust seasoning with additional salt and pepper if needed.

  2. 8

    Serve

Ladle meatballs with sauce onto plates or toss with cooked pasta. Top with coarse grated Parmesan and fresh parsley if desired. Serve hot.
