Preheat the oven to 400°F (200°C). Scrub the russet potatoes clean and pat dry.

Prick potatoes all over with a fork, then place them on a baking sheet and bake until tender, about 45–60 minutes.

Remove potatoes from the oven and let cool enough to handle. Cut in half lengthwise and scoop out most of the flesh, leaving a thin shell.

Mash the potato flesh with butter and sour cream until smooth. Stir in salt and black pepper to taste.

Brush the potato skins with olive oil, then sprinkle with a little salt and pepper. Arrange skins open-side up on a baking sheet.

Spoon the mashed potato mixture back into the skins. Top with shredded cheddar cheese and evenly sprinkle with bacon bits.

Return to the oven and bake until the cheese melts and the skins are crisp, about 5–7 minutes.

Garnish with sliced green onions and a light dusting of paprika if desired.
