    Mix dough: In a large bowl, whisk flour, sugar, yeast, and salt. In a separate bowl, combine warm water with olive oil, then pour into the dry ingredients. Stir until a shaggy dough forms.

    Knead: Turn dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic.

    First rise: Place dough in a lightly oiled bowl, cover, and let rise 60 minutes, or until doubled in size.

    Shape and second rise: Punch down dough and divide into 12 equal pieces. Roll each piece into a 7–8 inch rope (about 1/2 inch thick). Place on a parchment-lined baking sheet dusted with cornmeal. Cover and let rise 20–25 minutes.

    Bake: Bake at 400°F (200°C) for 12–15 minutes, until golden and crisp at the edges.

    Finish: Brush warm breadsticks with melted butter (optional) and sprinkle with a pinch of salt or herbs. If making 6 breadsticks instead of 12, halve the dough pieces before shaping.

    Sauté aromatics: Heat olive oil in a saucepan over medium heat. Add minced garlic and chopped onion; cook until translucent, about 3–5 minutes.

    Simmer sauce: Stir in crushed tomatoes, salt, sugar, oregano, basil, and red pepper flakes. Simmer 20–25 minutes, stirring occasionally, until flavors meld and sauce thickens slightly.

    Adjust and finish: Taste and adjust seasoning as needed. If you prefer a thinner sauce, simmer a bit longer or add a splash of water.

    Keep warm or serve: Remove from heat and keep warm until ready to serve with breadsticks.
