Shrimp Preparation

Prep the Shrimp
In a bowl, mix the cornstarch, salt, and pepper. Toss the shrimp in this mixture until well coated. Set aside.

Prepare for Frying
In a separate bowl, beat the egg. Dip each shrimp into the egg wash and then return to the cornstarch mixture for a second coating.
Frying Shrimp

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until shimmering.

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Make the Sauce
In a small saucepan over medium heat, combine minced garlic, red chili flakes, soy sauce, honey, rice vinegar, sriracha, and sesame oil. Stir and cook for about 2-3 minutes until heated through and slightly thickened.

Combine Shrimp and Sauce
In a large bowl, toss the fried shrimp with the prepared chili sauce until well coated.
Garnishing and Serving

Transfer the firecracker shrimp to a serving dish. Sprinkle with sliced green onions and sesame seeds.

Serve immediately while hot, with extra chili sauce on the side if desired.
