Preparation of Ribeye
- 1
Season the Ribeye
Remove the aged ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. This helps in even cooking. Pat dry with paper towels, then season both sides generously with salt and black pepper.

Grill the Ribeye
Once the grill is hot, place the ribeye steaks on the grill. For medium-rare, grill for about 4-5 minutes on one side without moving them. Flip and grill for another 4-5 minutes. Use a meat thermometer to check the internal temperature, aiming for 130-135°F (54-57°C).
- 4
Rest the Ribeye
Remove the ribeye from the grill and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute.
Preparation of Vegetables
- 5
Prepare Seasonal Vegetables
While the ribeye is resting, prepare the seasonal vegetables. Trim the ends of the asparagus, halve the cherry tomatoes, and slice the zucchini into rounds.
- 6
Season the Vegetables
In a bowl, toss the asparagus, cherry tomatoes, and zucchini with olive oil, salt, and black pepper to taste.
